This cake (Hebrew lekach), is traditionally served at the festival of Rosh Hashana in the hope of a sweet New Year.

Ingredients

  • 2 ¼ cups/275 g flour

Method

  1. Heat the oven to 350°F/175°C. Grease the pan and line the sides and bottom with wax paper. Sift together the flour, cinnamon, baking powder, baking soda and salt, removing one tablespoon to toss with the walnuts in a small bowl. Set aside.
