  1. Grease the pan and line the sides and bottom with wax paper. Put the sugar, cream and salt in a saucepan. Cook over medium heat, stirring with a wooden spoon until the sugar melts completely. Bring to a boil and continue cooking over medium heat without stirring to the soft-ball stage (239°F/115°C). If crystals form on the sides of the pan, wash them down with a pastry b
