A sprinkling of sugar added before baking gives a sparkle and extra crispness to simple meringue.

Ingredients

  • 4 egg whites, at room temperature
  • 1 cup/200 g sugar

Method

  1. With a balloon whisk, beat the egg whites until stiff. Add 4 tbsp of the sugar, one at a time.

  2. Continue beating until the egg whites are glossy, about 30 seconds. The meringue should form short peaks when the whisk is lifted.
