Almond paste, or marzipan, is used as a cake topping; it may be easily molded into cake decorations, and is a popular filling for candies and chocolates.

Ingredients

  • 1 ½ cups/300 g sugar
  • ¾ cup/175 ml

Method

  1. Make a sugar syrup with the sugar and water, and cook it to the hard-ball stage, 248°F/120°C on a sugar thermometer.
