The pale yellow inner leaves and hearts of baby artichokes are so delicate and tender they can be eaten raw.
Fill a large bowl two-thirds full of cold water and add to it the juice of 1 lemon.
Cut the stem from each artichoke flush with the base. Snap off the outer green leaves close to the base. Slice off any spiky tips on the remaining pale inner leaves and place the artichokes in citric water.
Remove the artichokes from the water one at a time and with a very sharp knife slice paper
