Lemon Barley water is a 19th-century beverage used as a digestive and considered to be a kidney cleanser as well. Today, it is sold in bottles like soda pop in England.

Ingredients

  • ½ cup pearl barley, washed and drained

Method

Wash the barley in cold water and strain. In a nonreactive saucepan, add the barley, salt, and lemon peel, and 10 cups cold water. Bring to a boil, reduce the heat, and reduce the mixture by half, stirring from time to time so the barley does not scorch the pan. Strain the liquid and discard the barley. Add the lemon juice and sugar syrup to taste. Place the mixture in a sterilized bottle. Cap
