I am a carrot cake purist and don’t like fruit or nuts in my cake. These cupcakes celebrate carrots and spice and all things nice.

Ingredients

Carrot Cupcakes

  • 1¼ cups canola oil
  • 1 cup granulated sugar
  • 1

Method

For the Cupcakes

  • Preheat oven to 350°F.
  • Line standard muffin tins with 24 paper liners. Set aside.
  • In a large bowl, combine oil, sugars, and vanilla. Whisk to combine.
  • Add the eggs, one at a time,
