My great aunt Mary has been making a version of these tender cookies for as long as I can remember. These aren’t the types of cookies that need icing. Instead they’re simply decorated with sprinkles and colored sugar before baking.

1 cup unsalted butter, softened
1½ cups powdered sugar

Method

Cream butter and powdered sugar together in a large bowl.
Stir in egg, vanilla, and almond extract until well combined. Stir in flour, baking soda, and cream of tartar.
Divide dough in half and form them into disks. Wrap well with plastic wrap and refrigerate discs for at least 3 hours or overnight.
