Pecan Butter Balls

Name: Pecan Butter Balls
Yield: Makes 60–70 cookies
Ingredients: 2 cups all-purpose flour; ½ teaspoon salt; ¼ cup granulated sugar; 1½ cups finely chopped pecans; 2 teaspoons vanilla extract; 1 cup unsalted butter, room temperature; 1 to 2 cups powdered sugar for coating

My neighbors introduced me to this wonderful cookie years ago. At Christmastime, when they bring over a tin of homemade cookies, these are the ones I reach for first.

Ingredients

1 cup unsalted butter, room temperature
¼ cup granulated sugar

Method

Preheat oven to 350°F.
In a large bowl, cream butter and sugar together. Add salt and vanilla and mix well.
Slowly add the flour to the butter mixture just until it forms a dough.
Add the chopped nuts and mix until just combined.
