Name: Oatmeal Cream Pies
Yield: Makes about 18 to 20 oatmeal cookie sandwiches
Ingredients: 1½ cups all-purpose flour; 1 cup unsalted butter, room temperature; ½ teaspoon salt; 1 teaspoon ground cinnamon; 1 teaspoon baking soda; ½ cup powdered sugar, sifted; 3 to 4 tablespoons honey; 1 cup raisins; 3 cups old-fashioned oats; 4 ounces cream cheese, room temperature; 8 ounces mascarpone cheese, room temperature; ½ cup granulated sugar; 1 cup brown sugar, packed; 1 teaspoon vanilla extract; 2 large eggs

These are not actually pies, but two buttery and chewy oatmeal raisin cookies sandwiched together with honey sweetened mascarpone cream. I came up with this idea on a whim several years ago when I wanted to bake for a special family friend and have been making them ever since. I can’t help but think of her every time I whip up a batch.
