These are not actually pies, but two buttery and chewy oatmeal raisin cookies sandwiched together with honey sweetened mascarpone cream. I came up with this idea on a whim several years ago when I wanted to bake for a special family friend and have been making them ever since. I can’t help but think of her every time I whip up a batch.

Ingredients

Oatmeal Cookies

  • cups all-purpose flour
  • 1 teaspoon baking soda

Method

For the Cookies

  • Preheat oven to 350°F.
  • In a medium bowl, combine the flour, baking soda, cinnamon, and salt. Whisk to combine and set aside.
