To Persians they are kuku, to Egyptians eggah, and to Syrian cooks, who add cheese, they are jibn. Whatever the name, these creamy baked omelettes are one of the culinary glories of Sephardi cuisine.

Ingredients

  • 1 bunch spring onions
  • pinch of salt
  • 2 cloves garli

Method

Preheat the oven to 190°C/Gas 5. Lightly oil a 20 × 20 cm (8 × 8”) ovenproof dish or cake tin and line the bottom and two of the sides with a strip of baking paper – this makes it much easier to remove the cooked jibn.

Thinly slice the trimmed spring onions, keeping the white a
