Chopped fried fish is an Anglo-Jewish favourite, perhaps inspired by the fried fish introduced by Sephardi settlers from Spain and Portugal. Instead of the traditional deep frying, we toss the fish balls with a little oil then brown them in a hot oven, a technique known as air-frying. It’s lot less messy, a lot more healthy, and doesn’t fill the house with the smell of fried fish. Plus there’s no panful of hot oil to deal with at the end. What’s not to like?
