A quick way to “dress up” peas. Leeks contain inulin, a type of fibre that’s good for gastrointestinal health, can help lower cholesterol and regulate blood sugar. Petits pois are naturally sweet, high in fibre, and vitamins A, B, C, and K.
Trim and thinly slice the white part of the leek. Melt the butter in a deep sauté pan and add the leek, cover, and braise gently until soft, about 5 minutes. Add the peas, salt, and pepper, then cook until the peas are tender. The dish can now be left for several hours covered with clingfilm. Reheat gently on the stove, or transfer to a serving dish and microwave until hot.
