A brilliant on-the-go breakfast or lunch box pick-me-up, these flap-jack style bars are packed with fibre that helps to balance the natural sugars in the honey. We like to use a mixture of chopped apricots, sultanas, goji berries, hazelnuts, sunflower and pumpkin seeds.

Ingredients

  • 225 g (8 oz) rolled oats
  • 3 tbsp each plain

Preheat the oven to 180°C/Gas 4. Lightly oil a 20 cm x 20 cm (8” × 8”) baking tin and line with baking paper, cutting a small square out of each corner so the paper fits neatly into the tin.
