When Scottish settlers first emigrated to the States back in the nineteenth century, they had the idea of using newly-discovered baking powder to leaven their scones instead of the soda and sour milk used in their native land, and baked in an oven instead of the traditional hearth-top griddle. Enter the scone we now know and love, which is so easy to make at home.
