In all my thirty years as a caterer and restaurateur, we never thought of whipping feta, ricotta, cottage or goat’s cheese to a cream. It works with any white soft cheese and makes a great dip. The sprinkled spices and good olive oil make it such a treat. I first had this version at a seaside café on the Greek island of Kos. Magic. Pomegranate seeds are good on this dish, and they look pretty, too.
