Gunpowder spice is commonly used in southern Indian cooking – where it is known as Malagai Podi. It goes on just about anything: to enliven raw food before cooking, to jazz up salads and to spice up rice. It gets its name because it has ground chilli in it – but it shouldn’t blow your head off. You can buy the spice mixture in big supermarkets or online, or make it from scratch, as here.
