Making fresh cheese is very satisfying (see the bottom). It’s so simple and magical. But it’s not worth doing with the odd pint of milk, which would produce a miserable coffee-cup of cheese.
Paneer is very similar to cottage cheese, the main difference being that cottage cheese is not pressed into a block but left in small curds. Also, cottage cheese is often made with semi-skimmed milk, while paneer uses whole.
