Brine is essentially salty water. Unsweetened brine is the liquid that preserves feta cheese, but chefs use a sweetened brine to impart flavour and to tenderize any meat.
To deliver a juicy, more flavoursome roast, you just sink the meat in the brine for a few hours, or overnight, then drain and dry it carefully and roast it in the usual way.
