Chicken B’stilla

This is a Moroccan pie, traditionally made with young pigeon for special occasions. But pigeon breasts being hard to find, I am making it here with chicken, which is truly delicious. When you read the recipe, you might shake your head in disbelief. Icing sugar and cinnamon? In a savoury pie? But the Moroccans are absolute masters of combining sweet and savoury. This one is fun to make – but one word of warning: when working with filo pastry it’s important to keep the pastry sheets you are n
