I can’t bear to waste the stem and leaves of a cauliflower, so I will slice them up and roast them along with the florets. They taste just as good.

Ingredients

  • 1 large cauliflower
  • 4 tbsp olive oil
  • ½ tsp ground turm

Method

  1. Trim the leaves and stem of the cauliflower. Cut the head into florets (see hack), split the leaves in two down the middle of the spines and chop up all but the very end of the stem, which will be tough.
  2. In a large bowl, mix the oil and spices to make a paste, and season with salt and pepper.
