This is such a useful cake. It works well for afternoon tea (albeit it requires a plate and fork to eat it), and is perfect as a dinner-party dessert, especially with a big dollop of crème fraîche or mascarpone and maybe a few fresh raspberries. And it’s easy to make, keeps well, freezes well and everyone loves it. But be warned: it’s very rich, so serve skinny slices.
