Evaporated milk, which (unlike condensed milk) is unsweetened, and tinned mango pulp make a less sweet version of the mango ice cream. The only problem is that mango pulp (which you can buy online) comes in big 850g/1lb 14oz cans, so this recipe makes enough ice cream for a party. To get the canned milk to double in volume when whipped, you need to refrigerate it overnight. In fact, it’s a good idea to chill the mango pulp and double cream too.
