Passionfruit Yogurt Cakes

Passionfruits become squashy and wrinkled as they ripen. But the wrinkled dark ones are sweeter than the good-looking smooth ones. I was once given a whole tray of beautifully ripe passionfruits for free because the stallholder said he’d never be able to sell them!

It’s not always easy to find passionfruits all year round, but passionfruit coulis or purée is sometimes available in the fresh fruit aisle or in a jar or bottle in the shops.
