The following combinations make for great flavour: just mash or process the veg, preferably while still hot from the oven or pot, and then beat in butter or double (heavy) cream until you have the consistency you like. Season well. Any veg, if it is soft enough, can be mashed or processed with plenty of butter or cream. Combinations of veg are good too (I’ve given some suggestions below), and quite ordinary veg can be made interesting and special by adding a few flavourings.
