Classic Italian pesto hails from Liguria in Italy and consists of a few key ingredients: basil, pine nuts, garlic, Pecorino Romano and extra-virgin olive oil. Traditionally, the lush green paste is made by crushing everything together using a pestle and mortar – not something I’m up for while I have the luxury of a food processor or blender. Blob it generously on pasta, sandwiches, salads, fish, grilled (broiled) meat or anything else. I like it on grilled sausages!
