This is a really useful French sauce – good with almost everything. I sometimes serve it on top of an omelette, but it is more usually served with fish, either grilled (broiled) or poached, and with chicken or hard-boiled eggs.

Ingredients

  • 2 small shallots, finely chopped
  • 4 ripe tomatoes, diced
  • a small handful of basil leaves

Method

Mix all the chopped ingredients together, then add the rest, stirring gently. Taste, then adjust the seasoning with salt and pepper. Leave the sauce to sit for 15 minutes before using.
