Romesco is a Spanish sauce, made from that perfect marriage of (bell) peppers, tomatoes and garlic. I like it with steak or lamb chops, or to gee up leftover rice or potatoes as a cold salad.
Ingredients
225g/8oz roasted red (bell) peppers from a jar, drained
Blitz all the ingredients, except the oil, in a blender or food processor. With the motor running, gradually add the oil, then taste and adjust the seasoning.
