Gremolata is an Italian salsa, not unlike the French persillade. Both are fairly dry mixtures, without too much oil, based on parsley, lemon and garlic. Gremolata is traditionally sprinkled over osso buco, a rich veal stew, but it’s useful in sandwiches and on fish. Or on raw oysters.
Gently toss all the ingredients together in a bowl, then taste and adjust the seasoning. Leave the sauce to sit for 15 minutes before using.
