Mariella, a wonderful housewife and cook, taught me this. It’s easy and such a good idea for using zucchini in a different way.


  • zucchini (courgette) strips
  • 3 tablespoons olive oil
  • ½ teaspoon finely grated lemon rind, yellow part only
  • juice of ½ lemon
  • small handful of mint leaves


Put the zucchini strips in a bowl with the oil, lemon rind and juice, salt and pepper. Tear in the mint and turn through to combine. Cover and put in the fridge for an hour or so before serving. Lovely even the next day.
