Ingredients

  • 1.75 litres (61 fl oz/7 cups) water
  • 1 carrot
  • 1 small onion, peeled
  • 1 celery stick
  • 1 whole garlic clove, peeled
  • a few peppercorns
  • handful of fresh herbs

Method

Put all the ingredients, except the herbs, in a pot with some salt and bring to the boil. Skim the surface if necessary, then simmer for about 30 minutes. Add the herbs to infuse for the last 5 minutes or so. Strain to use.
