Serve this with Fior di latte ice cream. I love the combination of lemon and fior di latte.

Ingredients

  • 250 ml (9 fl oz/1 cup) water
  • 1 long strip of lemon rind, yellow part only
  • 180 g ( oz) sugar
  • juice of 3 lemons (about 150 ml/5 fl oz)
  • 3 tablespoons bought or home-made limoncello

Method

Put the water, lemon rind and sugar in a pot. Bring to the boil, then reduce the heat and simmer for 5 minutes Remove from the heat. Stir in the lemon juice and the limoncello. Cool completely. Remove the strip of lemon rind. Churn in an ice-cream machine following the manufacturer’s instructions. Store in the freezer in a sealed container.
