Ingredients

  • ½ cup + tablespoons (82 g) sweet rice flour, such as Koda Farms mochiko

Method

In the bowl of a stand mixer fitted with the paddle attachment, combine rice flour, buckwheat flour, potato starch, teff flour, and sugar on low speed. Gradually add butter and mix on low speed until pea-size lumps form, about 2 minutes.
