Method

In the bowl of a stand mixer fitted with the paddle attachment, cream butter and sugar on medium-low speed until mixture is pale and fluffy, 2 to 3 minutes.

Add ground almonds and continue to mix for 2 minutes. Scrape bowl well with a rubber spatula to prevent lumps. Add egg and mix until incorporated. Scrape bowl well. Add salt and continue to mix on medium speed until almond cream is
