The rose essence adds a floral note to this beautiful berry scone. You can use blackberry and mulberry, too!
In the bowl of a stand mixer fitted with the paddle attachment, combine flour, sugar, baking powder, and salt on lowest speed. Add butter and mix on low speed until pea-size lumps form. Add eggs, cream, and rosewater. Mix on lowest speed until just combined, 15 to 20 seconds. Add strawberries and mix until just combined, 5 to 10 seconds. Do not overmix. Dough should be shaggy with some dry bits
