Make at least 1 day before you assemble the cake. Can be made up to 2 days in advance.
Place milk in saucepan and bring to a simmer. Continue reducing at a simmer for 30 minutes. Add honey and continue to simmer for another 30 minutes. The reduction will have a light caramel color. Cool completely and remove any skin that has developed, or strain.
