Ingredients

  • 1 egg white
  • 6 small mint leaves
  • 2 tablespoons granulated sugar

Method

Whisk egg white with a fork to break up albumen. Use a pastry brush to brush both sides of mint leaves with egg white. Dip each leaf in granulated sugar. Set leaves on a parchment-lined sheet pan to dry overnight, or at least 2 hours.
