Ingredients: ½ teaspoon orange zest; ¼ teaspoon almond extract; 1 cup (120 g) all-purpose flour; 1 tablespoon granulated sugar; ⅛ teaspoon sea salt; 1⅔ cups (144 g) sliced almonds; 1 cup (200 g) granulated sugar; ¼ teaspoon wildflower honey; ½ teaspoon vanilla extract; 1 cup (240 g) heavy whipping cream; ½ cup (114 g) unsalted butter, cut into ½-inch cubes and chilled; 1 tablespoon ice cold water
