Whenever I see these little pastries in the case at Little Flower, I think of perfect little soldiers standing at attention, waiting to be eaten. They are dense, chocolaty, salty, and irresistible.

Method

Preheat oven to 375°. Lightly coat bouchon molds with nonstick spray and set aside on a sheet pan.

In the bowl of a stand mixer fitted with the paddle attachment, combine sugar, brown sugar, cocoa powder, ground espresso, and salt on low speed for 30 seconds. Stream in melted b
