Smooth or crunchy? I’m a crunchy person, but we use smooth in the bakery to make this delicious cookie. For a fun variation, add some chopped salted peanuts to the tops before baking.
In the bowl of a stand mixer fitted with the paddle attachment, cream butter, peanut butter, and sugars on low speed for 30 seconds. Scrape bowl well with a rubber spatula. Add eggs one at a time on low speed, scraping bowl after each addition. Add vanilla extract and mix on low speed for 1 minute.
