Salty and chewy, this cookie is one of my very favorites. Use good-quality cocoa powder for a dark-chocolate flavor, and you’ll be in heaven.
In the bowl of a stand mixer fitted with the paddle attachment, cream butter and sugars on medium speed until fluffy. Scrape bowl well with a rubber spatula. Add eggs one at a time, mixing on low speed until combined. Scrape bowl well. Add vanilla extract. Sift together flour, cocoa powder, baking soda, and salt and add to wet mixture. Mix on low speed until just incorporated. Scrape bowl well.
