Savory with a little heat—we love Sriracha! These were inspired by Diep Tran’s blistered corn, which she serves at Good Girl Dinette in L.A.’s Highland Park neighborhood. Note that fish sauce can be found in many markets, but our favorite, Red Boat, is less commonly seen; you can get it at Sur la Table or on Amazon.

Ingredients

  • cups (510 g) all-purpose flour, plus more for dusting

Method

In the bowl of a stand mixer fitted with the paddle attachment, combine flour, baking powder, and salt on low speed. Gradually add butter and mix at low speed until pea-size lumps form.

Add eggs, cream, and fish sauce, mixing on low speed until just combined, about 30 seconds. Add corn and green onions, mixing on lowest speed for 30 seconds, until just combined but no longer. Dough shou
