Miso adds an extra bit of savory flavor to these nutty crackers.
Place whole-wheat flour, all-purpose flour, salt, and buckwheat groats in a food processor and blend. Add cold butter, miso, and olive oil. Continue to blend until mixture resembles coarse meal. Add cold water and continue to mix until dough pulls away from the side to form a ball.
Form dough into a rectangle. Wrap with plastic wrap and let chill in the refrigerator at least 30 minutes.
