During his Army career, Karlos became well acquainted with the daily breakfast of soldiers, “shit on a shingle.” Back in Acadiana, he now makes a delicious version with crawfish. The French name certainly adds some much-needed panache.

Ingredients

  • ¼ cup butter
  • 1 small yellow onion, diced
  • 6 oz. tasso<

Method

Melt the butter in a large sauté pan and add the onion and tasso. Sauté until the onion is soft and the tasso is browned and somewhat crispy. Add the garlic and sauté until aromatic, around 1 minute. Pour in the claim juice and cook over medium heat until reduced by half. Add the cream and salt, black pepper, and cayenne pepper, and continue cooking until thick and creamy, reducing by about hal
