Zydeco Salé

The Cajun music term “zydeco” is said to originally come from the French phrase “Les haricots ne sont pas salés,” “the snap beans are not salty.” When spoken in the Cajun French vernacular, which has is largely an oral language, it sounds like “leh-ZY-dee-co sohn pah salEH,” in bayou country often meaning, “I have no spicy news for you.” It is not surprising that this is Louis’ favorite way to cook the string beans he grows at home.
