My favorite roast beef poor boy is the dripping, delicious version served at Parkway Bakery. They serve hundreds of pounds of this fork-tender, fabulous roast beef every week on crispy, hot French bread. With some advice from Jay Nix, Parkway’s owner, here is a version scaled down for your home kitchen.
Season the roast with salt and pepper.
With the food processor running, drop in the garlic cloves one at a time to finely chop them. Add the onion and the parsley to the food processor and chop, pulsing continuously until minced.
