This works great as a vegan meal mixed with edamame and a sprinkle of hemp seeds.

Ingredients

  • Juice of two lemons
  • 2 tbsps. (30 ml) olive oil

Method

Directions

  1. Whisk together olive oil, lemon juice, maple syrup, salt, and pepper.
  2. Pour dressing onto kale and massage with hands to ensure the kale is well dressed and well wilted.
  3. Add cherry tomatoes, cucumbers, and chopped jicama or cabbage for color and crunch.
  4. Toss to coat.
