My husband’s good friend growing up, Ira Silver, was South African, and this is how his family prepared egg salad. It was a huge change from the heavy mayonnaise-based egg salads I grew up eating as a kid, and once I tried this version, I was instantly hooked.

Ingredients

  • 6 hard-boiled eggs, boiled for 7 minutes, with two to three yolks removed and reserved (you can use them in another recipe to emulsify a vinaigrette)

Method

  1. Cut each egg into about 6 pieces.
  2. Mix all of the ingredients together well, leaving large chunks of egg. Layer over toasted whole grain bread with a thick slice of a good tomato and sprinkled chives on top for a delicious breakfast, lunch, or snack.
