This isn’t exactly like strawberry cheesecake ice cream, but it sure comes close and hits the spot!! If you freeze it for longer than the recipe recommends, simply allow time for it to defrost on the counter for five or so minutes before scooping.

Method

Blend cottage cheese with honey, vanilla, and stevia to taste. Pour half of the mixture out into a resealable container and freeze. Add frozen strawberries to the remaining cottage cheese, honey, and vanilla mixture and blend again. Pour this pink cottage cheese mixture into a separate resealable bowl or container. Freeze both for two to three hours.
