This is a great dish for autumn and winter, showcasing pork at its absolute best. It’s quick and simple to prepare but makes an impressive dinner party main. If medallions are hard to find, buy pork tenderloin and slice to suit.

Ingredients

  • 6 (about 300 g) pork fillet medallions
  • 6 rashers of smoked streaky bacon

Method

Wrap a rasher of bacon around each medallion and season with salt and pepper.

Heat the oil in a pan over a medium to high heat.

Add the medallions and cook for 3 to 4 minutes on each side ensuring the bacon crisps up nicely around the outside. Add the apple to the pan and brown on all sides.

Once the pork is cooked, transfer to a plate, cover with foil and set aside to r
